I know AIM has a timestamp…but Yahoo, MSN, ICQ and I think AOL do not.
Are there plugins available for each of these messengers to have timestamps?

What’s a timestamp?
Timestamps for what exactly? For your current conversations or logs? I know Yahoo does have it and MSN can have it with the addition of Messenger Plus! and the StuffPlug plugin. As for ICQ and AOL I do not know.
Querty a timestamp is something that looks like this example in a conversation or a log of a conversation:
[09:48 PM] Username: Hello
It’s pretty much just the time you or your friend sent a message.
In Yahoo, in the IM window, you can go to the view menu and select timestamp, or simply press F2 to display them. Is this what you mean? Also the message archives automatically have the timestamps on them.
