Okay…Okay…Yes me again…lol…Guess I’m on a roll…I know what all of you are thinking…lol..OMG…NOT FRUIT CAKE!!!…But I can promise you this is not your everyday fruitcake…One of my swedish clients gave me this recipe…from the old country…hehehe…She passed away a few years ago, but every holiday when I make this fruitcake she puts a smile in my heart and on my face…Hope you will enjoy…
Swedish Christmas Cake…by my sweet Vera
1 lb Brazil nuts shelled
1 lb walnuts
2 lbs dates
1 cup raisens
1 cup for each red and green cherries
1 cup candies fruit
Sift together…
1 1/2 cups flour
1 1/2 cups sugar
1 tsp. Baking Powder
Pour over fruits and nuts and mix well…Beat four eggs…Pour over mixture of flour and nuts. Mix well with hands. Can use tuffle pan or 3 loaf pans…
Bake at 325 for 1:45 minutes-2 hours Let cool well before you take out of pans…Enjoy!!!
