This image below is all I am getting while in edit mode. Where is the delete option hiding?

Well I guess I am replying, you did aska question :D. I believes it’s like this: you can delete your own posts, but not if it starts a thread, so since your post happens to be the thread… only a moderator can remove it.
Post a reply and try to delete that. The easiest way is to just hit the edit button, so it goes into quick edit mode, then press the “Delete” button.

And yes, you can only delete your posts when only when they are not the beginning of a thread.
As a side note, maybe Oreo can move this to Forum Support? To let her continue testing there!
