KeymasterWhen I was a teenager, they didn’t have video games. I played sports (spent a lot of time outside!), read books, listened to music, and…. cooked. At risk of being labeled weird (too late?) I’m going to let you in on a little secret. I bought my first cookbook as a teenager over 20+ years ago! (Yes, I AM that old!)

Anyhow, The Tassajara Bread Book was written by Zen Buddhist Ed Brown, and it contains the greatest pancake recipe I’ve ever used. Here it is, with my edits:
WHOLE WHEAT PANCAKES
Serves 6 perhaps
I usually make a double batch!- 2 c whole wheat (pastry) fluor
I’ve always used regular, white bread fluor. I don’t like the gritty texture of whole wheat fluor in my pancakes. - 3 t baking powder
- 1 t salt
- 1T brown sugar or honey
Either one tastes great! - 3 eggs, seperated
Ah…part of the secret. Besides, it’s fun seperating eggs! - 2 c milk
- 1/2 c oil
Sift fluor with baking powder, salt and sugar. If using honey, add it to the milk and oil. Beat milk and oil into beaten yolks.
Combine yolks, milk and oil with dry ingredients until just blended; then fold in stiffly beaten egg whites. Cook on greased griddle or frying pan. May be made of any size.
VARIATIONS
- May be made without seperating eggs.
I wouldn’t advise it! - May also be made with fruit puree: apple, apricot, peach, pear, in place of milk or
- Add fruit chunks, or
- Slip in some tahini, nuts, sesame, or sunflower seeds, or
- Use some corn meal or rolled oats, barley flour or buckwheat (1/2 c).
- For waffles use only 1-1/4 c milk.
I checked on Amazon, and this book is still available! (except it’s missing all the stains and scribbles Great bread recipes in there, too.

LOL – Maybe a first annual BigBlueBall Pancake Breakfast? But where would we have it? Maybe we all pick a day, and point our webcams at the griddle… and make our own!???
