MemberJust have to shake your head and wonder…. (above post)
One of my mothers favorite Christmas treats to make was Pecan Dainties, and I have to make them now that she is gone. They are pretty easy as well and the family loves them.
Cups:
1 Stick Butter
1 small cream cheese
1 cup plain flourFilling:
2TBS melted butter
3/4 brown sugar
2/3 cup pecans
1 egg-beaten
1 tsp vanillaSoften butter and cream cheese, and mix together by hand.
Chill for 30 minutes. Form into small balls and flatten into mini muffin pans to make cups. (sprayed with non stick cooking spray)
For the filling, mix all ingredients together, and spoon a small amount into the cups. Bake at 325-350 degrees, until brown. They are just mini pecan pies, but the homemade cup is delicious and makes it a very special treat!

MemberBut seriously. ALMOND BRITTLE is the best (if your into that sort of thing).
Ingredients:
2 c. sugar
1 lb. unsalted (sweet) butter
1/4 c. water
10 oz. sliced almonds
8 oz.unsweetened chocolate
Combine sugar, butter, and water in a large heavy pot (stir constantly and bring to a boil over moderately high heat until it reaches 295 degrees). Remove and stir in almonds. Spread on two cookie sheets. Then, melt the chocolate over very low heat and when the candy is almost cool, brush over with the chocolate.Wait till it hardens before you eat it.December 19, 2002 at 3:21 pm #65767alien
