This is the most incredible recipe for Pecan Bars. I have given them as gifts at Christmas time, served them at piano recitals and just recently made them for my friends birthday party. They are sure to be a hit for you, your family and friends this holiday season.
Pecan Bars
Makes 20 large or 40 small squares
Crust
1 1/4 pounds unsalted butter
3/4 cup granulated sugar
3 extra large eggs
3/4 tsp. pure vanilla extract
4 1/2 cups all purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
Topping
1 pound unsalted butter
1 cup honey
3 cups light brown sugar, packed
1 tsp. grated lemon zest
1 tsp. grated orange zest
1/4 cup heavy cream
2 pounds pecans, coarsely chopped
Preheat oven to 350 degrees
For the crust, beat the butter and granulated sugar for 3 minutes. Add eggs and vanilla, mix well. Sift flour, baking powder and salt. Mix dry ingredients in with the batter on a low speed with the mixer. Press dough into ungreased 18 by 12 by 1 inch baking sheet. It will be sticky so sprinkle the dough and your hands with flour. Bake for 15 minutes, until crust is set not browned. Allow to cool.
Topping: Combine butter, honey, brown sugar, amd zests in a large, heavy bottom saucepan. Cook over low heat until butter is melted. Raise the heat and boil for 3 minutes. Remove from heat. Stir in heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 – 30 minutes, until the filling is set. Remove from the oven and cool. Wrap in plastic and refrigerate until cold. Cut into bars and serve.
For a special treat, dip half of each bar into chocolate. Enjoy!
