Take Mom out for brunch or…make a decadent brunch for her in your home…Well I have done both, and even tho it is extra work for me a mother, I prefer the latter. It’s more intimate, and you don’t have to fight the crowds. So I thought I would share with everyone what I am planning for Mom’s Day…For both my Mother and Mother in law, also my dear sweet Aunt who is like a Mom to me, will be at my home by 10:00 sunday morning.
The table will be covered with white linen, draped with white lace. A large over flowing vase placed in the middle of flowers cut from my garden. My nice plates and silver, will be placed on the table along with my crystal goblets, with a slice of strawberry on each goblet.
The first thing I’m sure they will notice is the plater of strawberries dipped in chocolate, and a basket of warm muffins which will fill the air of sweetness…
The Menu…..
Eggs Benedict…
Bacon…
Strawberries dipped in chocolate…
Muffins..I cheated, and went to costco…hehehe
apple snickers salad…Beverage…Champange and fresh ground coffee
Dessert…
Spring Fruit Pudding…courtesy of Emeril LagasseMaybe my menu will give you some ideas..The possablities are endless…You know what may be some of your Mom’s favorites. Make her feel special on that very special day…

My Yummy Apple Salad…
8 med. Apples (bite size)
3 lg. snicker candy bars (bite size)
1 sm pkg. vanilla pudding
1 1/2 cup milk
8 0z cool whipCut Apples and candy bars in bite size pieces…
Mix pudding with the 1 1/2 cups milk, add the cool whip and mix…
Add mixture into the apples and snickers, mix…Such a wonderful easy fruit salad and one you will always be asked to make…lol Enjoy!!!

Broccoli Salad…
1 1/2 Bunch Broccoli
1 Lg. red onion
Sunflower seeds
Bacon BitsDressing…
1 cup mayo
1/2 cup sugar
1/2 cup applecider vinagerMix dressing good…add extra sugar to your taste…poor over broccoli and onions…mix well…sprinkle sunflower seeds and bacon bits and mix…YUMMY!!!

Egg’s Benedict…
12 egg’s
6 english muffins split in two
12 piece’s of sliced hamMornay Sauce…
1/4 cup butter
1/4 cup all-purpose flour
1/2 tsp salt
1/8 tsp nutmeg
2 1/2 cups milk
1 1/2 cups sherdded Gruye’re or Swiss cheese (6 oz)
1/2 grated Parmesan cheeseHeat butter in 2 qt. saucepan over low heat until melted. Stir in flour, salt and nutmeg. Cook over low heat, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir for one minute. Add cheeses; cook and stir until cheese is melted and mixture is smooth..
On a cookie sheet lined with foil place english muffin halfs upward.
Place a slice of ham on muffins. Place one poached egg on each.I keep the eggs benedict in a warm oven until the sauce is done, and right before serving I drizzle the sauce over the eggs and place on a plater…
Tip; when poaching eggs make sure the water is a rolling boil, and add salt and a little vinager…crack the egg and put it in a coffee cup…then slowly pour into water mixture…it really does help keep the eggs from breaking so does the little bit of vinager and salt…
Mom will love your Egg’s Benedict…ENJOY!!!

Spring Fruit Pudding…
Strawberry Coulis:
2 cups strawberries, quatered
* cups sugar
1 tsp lemon juiceMango Coulis;
2 cups cubed mango
* cup sugar
1 tsp lemon juiceSpring pudding;
6 cups cubed angelfood cake, torn into 2 inch chunks
2 cups each mango and quartered strawberries
2 cups sweetened shipped cream
5 mint sprigs, for garnishStrawberry coulis; Combine ingredients in a small pot, bring to a boil, and simmer for 12 minutes. Puree until smooth.
Mango coulis; Combine ingredients in a food processor and process until smooth.
In a small (2 quart) trifle dish or pretty glass bowl layer 1 1/2 cups of cake pieces. Top with 1 cup of mango pieces and 1 cup of mango coulis. Layer 1 1/2 cups of cake pieces and top with 1 cup of strawberries and 1 cup strawerry coulis. Layer 1 1/2 cup of cake pieces and top with remaining mango and mango coulis. Layer remaining cake pieces and top with remaining strawberries and strawberry coulis. Spread whipped cream over the entire surface and chill until ready to serve.
Garnish with mint leaves…
Tip: You can also add a little rum when you layer…be careful not to get Mom smashed tho…LOL…ENJOY!!!

For dinner, it’s lasagna, salad, and bread, followed by that fresh strawberry and chocolate sauce fondue thing you talked about. I’ll let you know how it goes over.
