I made this bread for Thanksgiving…and BOY was it yummy…and soooo easy. I suggest though putting it in three loaf pans (makes a lot)…and also can add nuts if you like.
Cranberry Pumpkin Bread

4 eggs
2 cups pumpkin puree
1 cup vegetable oil
4 cups sugar
4 1/2 cups all-purpose flour
2 tablespoons pumpkin pie spice
2 teaspoons baking soda
1 teaspoon salt
4 cups cranberries
Preheat oven to 350 degrees F.In bowl combine eggs, pumpkin puree and oil. Add dry ingredients and mix well. Add cranberries and mix well. Divide dough into 2 (8 by 4-inch) loaf pans. Bake for 50 minutes.
Yield: 2 loaves
Prep Time: 10 minutes
Cook Time: 50 minutes

What is “pumpkin pie spice”?The pumpkin can either be from a can or from a cut up pumpkin and placed in the oven to bake. After the pumpkin is soft to being poked with a fork, take out and let cool. Then scrape the meat from the skin and put in a bowl and mash. At that time you can put the pumpkin meat into a blender and puree. Walla…pumpkin puree…:D
As far as pumpkin spice…You can buy that in the store…usually in with the spices. It will say “pumpkin spice”…or make your own. It consents of Cinnamon, ground cloves, nutmeg, and a pinch of ginger…:p
