I made a big pot of Clam Chowder yesterday and boy was it yummy……and very simple to make…:)
Keep in mind I always double or better my recipe…
THICK & CREAMY CLAM CHOWDER
2 cups Potatoes
2 8oz cans of minced clams
1 med. onion finely chopped
1/2 cup cut up bacon
3 stalks of celery finely chopped
3 cups of milk or half & half
Salt and Pepper
In your soup pot cook bacon until crisp, add onions and celery…saute until tender. Add clams (with juice) , potatoes…water may need to be added to barely cover potatoes…bring to a boil for about 15 minutes or until potatoes are done. Turn stove down to low and add Half & half, or milk..(I use Half & half then add milk to fill if needed. Salt and pepper to taste. DO NOT BRING TO A BOIL.
Cook slow and on low heat until ready to serve. (I sometimes add a couple of teaspoons of corn starch in a little cold water…mix well before added to the chowder)…makes a thicker chowder…
I always have to double this recipe…sometimes three times over…they always want more…hehehe
Serve in sourdough rounds hollowed out as a bowl…
